Since no one else has put in a plug for EndNote, let me do so. 
Caveat: I've only worked with Mac versions of EndNote and Reference
Manager, and the last time I looked at Reference Manager was more
than a year ago.

I found the EndNote software superior in its interface to Reference
Manager (RM).  For Word users, they have a Plug-in Module that allows
you to format and unformat from within your Word document.  It was
also substantially cheaper!  The only reason that I would consider RM
is if I was using their Reference Update disks/service (but our
library does almost the same job cheaper).

One of the terrific advantages of EndNote is their online presence in
terms of tech support.  There is a LISTSERV and a corresponding
newsgroups (bit.listserv.endnote).  One of their premier tech support
people is extremely active in answering questions about
Mac/DOS/Windows versions.

They also have a new project going to set up styles for tens if not
hundreds of scientific journals, and they are working with users to
hone these styles.  If you're interested, you can email
