Alcohol dehydrogenase from yeast is nice too, as it introduces quite a 
few techniques in protein purification: Preparation of an acetone powder, 
heat inactivation, ion exchange chromatography and ammonium sulfate 
crystallization. The enzyme is "student proof" and the spectrophotometric 
assay easy.
