Radish (Raphanus sativus L) is fast, but not as fast as Rapid Cycling
Brassicas (RCBr) if you want to go from seed to seed.
Under 24 hour fluorescent lighting (which is what RCBr require for their 5
week life cycle), you can get a harvestable plant (with good leaves and an
edible tap-root) inside 2 weeks, anytime of the year. Full growing
instructions in reference below.
They are easy to grow and will also function reasonably on a windowsill in
summer if you are happy with medium-fast plants.
