Our Introductory Plant Biology I-II, a two-quarter course for non-majors,
is probably more like a traditional botany course than the one you will be
teaching.  However, we include the "plants and civilization" theme.  We
have considered several texts listed below and right now we're using
Stern's 7th edition.  The Levetin and McMahon book might be more
appropriate for your course:
