Adding to the other answers, of course the tap hole does plug. If you
tap in January, to catch the January thaw, you risk slower flows latter as
the hole seals (somehow). On the other hand, the January thaw produces
the finest sap, very high in sugars, resulting in premiuim syrup due to
less boiling needed and therefore less caramel production. (Some carmel
is essential to flavor, however.)
