oxygen bubbles from photosynthesis

Neal,

My experience with supermarket spinach - I havebought it in Australia, 
Germany and the USA - is that if  it is hydropnically grown it exhibits 
lousy rates of photosynthesis and contains very low levels of chloroplast 
proteins. My suspicion is that you are really buying expensive water! I 
wonder if the varieties are polyploid as well?
