Here are recipes for extraction and chromatography of anthocyanins:
Grind plant tissue in a mixture of 18% (v/v) n-propanol, 1% HCl, and 81%
water.  This is a fairly standard procedure, it will extract anthocyanins but
not chlorophylls and carotenoids. For chromatography: make a mixture of 40%
n-butanol, 50% distilled water, and 10% glacial acetic acid.  Shake well, let
the two layers separate, separate them with a separatory funnel.  Use the
upper layer from chromatography on paper or cellulose thin layer.
