You may wish to check out Biotechnology: Science For the New Millennium by 
Ellyn Daugherty.  She does a set of chapters around plants focused on 
Arabidopsis.  You can get free preview copies of the book and lab manual 
through the publisher, EMC-paradigme.

We are working on developing a new mid-level UG lab in Genetics. One of 
the developers posed the following question "  I am thinking about doing a 
series of crosses to map some genes - preferably visible alleles, possibly 
PCR-revealed markers.  Can you point me toward any such labs using 
Arabidopsis? "
