There are some excellent book and book chapters that can help you in
explaining the difference between science and religion to your
students.
Sinauer publishes a book "Science on Trial: The Case for Evolution" by
Doug Futuyma. You could also look at Futuyma's most
recent text Evolutionary Biology (also published in 1998 by Sinauer
-http://www.sinauer.com). He has an appendix in this book on dealing
with Creationism. Another good text is Evolutionary Analysis by
Freeman and Herron published by Prentice Hall also in 1998. There are
some very good introductory chapters on Darwinism and the evidence for
evolution.
As someone who teaches Evolutionary Biology at a religious school my
best advice is to first make clear the difference between faith and
science. Science does not necessarily obviate religion. I would not
get into the story of creation. That is religion and does not belong
in a science class. You should also realize that in a few lectures you
will not be able to change everyone's mind but if your provide them
with reading and something to think about you will reach some of your
students.
